Type: Astringent persimmon (high tannins at harvest), but commonly de-astringed so it can be eaten firm/crisp like an apple, or left to fully soften for a jelly-sweet texture.

Look: Large, elongated/oval to tomato-shaped fruit with smooth skin that turns deep orange to orange-red/red when ripe; often seedless.

Flavour/texture: When fully ripe/soft it becomes very sweet and custardy/jammy.

Season: Typically late season—sold/harvested from autumn into winter (often mid-Oct to Jan in Northern Hemisphere markets; late autumn in Australia).
